Mrs. Boyd's Christmas Morning Monkey Bread

Here are two holiday favorites around the house of our web-producer John Boyd.  And, check out our yummy hummus recipe, too!

Our three daughters love this Christmas morning meal not only because it's yummy...but it's also quick to eat so they can get back to playing with their presents!

Christmas Morning Monkey Bubble Bread

Ingredients:

  • 24 ounces thawed dinner roll dough
  • 1 cup packed brown sugar
  • 1 (3.4 ounce) package cook and serve butterscotch pudding mix
  • 1/4 cup white sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup melted butter spread
  • 1/2 - 1 cup chopped walnuts (optional)
  • 1/2 - 1 cup baking raisins (optional)

Directions:
The night before:
Grease and flour a 9 or 10-inch tube pan.
Mix brown sugar and pudding mix together.
Mix white sugar and cinnamon together.

Use kitchen shears and snip rolls into quarter sections. Place frozen dinner roll chunks in pan a layer at a time. Sprinkle brown sugar and pudding mix over first layer of rolls. Sprinkle sugar and cinnamon mixture over the brown sugar and pudding mixture. Spread half the nuts and raisins and melted buttery spread over first layer. Repeat with the layers.

Place on counter over night. Do not cover.

Next morning bake in a preheated 350 degrees = oven for 30 minutes. Let stand a few minutes and turn pan over onto serving patter.

Sweet Potato Casserole

Ingredients:

  • 6 sweet potato - peeled, cooked, & mashed
  • Œ C. milk
  • Œ C. orange juice
  • 1 t. vanilla extract
  • œ C. sugar
  • œ t. sea salt
  • 3 T. butter
  • œ t. ground nutmeg
  • œ t. ground cinnamon

Topping:

  • 1/3 C. butter - melted
  • Ÿ C. brown sugar
  • œ C. flour
  • Ÿ C. chopped pecans

Directions:
Preheat oven to 350 degrees. Grease a 2-quart casserole dish and set aside.

Blend together the sweet potatoes, milk, orange juice, vanilla, sugar, salt, 3 tablespoons butter, nutmeg and cinnamon. Pour into prepared casserole dish.

Prepare the topping by mixing together the 1/3 cup butter, brown sugar, flour and pecans. Sprinkle over casserole and bake for 45 minutes or until hot.


Super-Simple Hummus

Ingredients:

  • 14 oz. chick peas, drained - set aside broth
  • œ C. tahini
  • Œ C. of the chick pea broth
  • Œ C. lemon juice
  • 2 cloves of garlic
  • 1 t. cumin
  • 1 t. sea salt

Directions:

Place ingredients in blender. Whiz until smooth. Serve with pita and/or veggies.
