Watermelon and Red Onion Salad
6-8 slices ripe watermelon (1/3" thick by 2-3" triangles or squares)
6-8 thin slices red onion
¼ c. crumbled Feta cheese
3 tbsp Pomegranite Vinaigrette
Layer slices of watermelon with the red onion, then drizzle vinaigrette over the top and finish with feta cheese.
(OPTIONAL-you may also add toasted pine nuts or arugula for a more complex salad)
Pomegranite Vinaigrette
1 tbsp Pomegranite infused Balsamic Vinegar
1 tbsp Pomegranite Molasses
½ tsp dijon mustard
3 tbsp olive oil
S & P to taste
Mix first three ingredients, then slowly drizzle in olive oil until emulsified. Season to taste with the salt and pepper!
